Mushroom Soup with Curry – Simply Delicious
This warming mushroom soup combines brown mushrooms with mild curry, crème fraîche, fresh parsley, and lemon. It takes about 35 minutes to prepare and serves four.

Ingredients
- 300 g brown mushrooms, cleaned and thinly sliced
- 150 g crème fraîche or cream
- 40 g butter
- 2 medium onions, about 130 g total, finely diced
- 1 litre vegetable broth
- 2 tablespoons fresh parsley, chopped
- 1 splash lemon juice
- 1 tablespoon flour
- 1 teaspoon mild curry powder, plus more to taste
- Salt and pepper, to taste
Instructions
- Clean the mushrooms and cut them into thin slices. Finely dice the onions.
- Heat the butter in a large pot. Add the mushrooms, followed by the onions. Sprinkle with the flour and cook over high heat for 5–8 minutes, stirring regularly.
- Add the curry powder and cook briefly to release its aroma.
- Pour in the vegetable broth and bring the soup to a boil. Season generously with salt and pepper, then simmer for about 5 minutes.
- Stir in the crème fraîche or cream, chopped parsley, and a splash of lemon juice. Mix well and adjust the seasoning with additional salt, pepper, or curry powder.
- Serve hot.
Tip
Serve the soup rustic-style with sliced mushrooms, or blend it until smooth for a creamy consistency.
