Recipe to Prepare an Unforgettable Eggplant Lasagna

Eggplant lasagna—also known in some kitchens as aubergine pastiche or moussaka—is a rich, comforting baked dish. This version combines eggplant with Bolognese sauce and cheese, plus a single middle layer of boiled eggs for a distinctive touch.

Choose medium or large eggplants. Slice them lengthwise for a rectangular baking dish or into rounds for a circular dish so the pieces cover the surface evenly. A glass or clay baking dish works well.

Ingredients

For 4 servings:

  • 3 large eggplants
  • 500 milliliters prepared Bolognese sauce
  • 300 grams mozzarella cheese
  • 60 grams Parmesan cheese
  • 4 boiled eggs
  • Olive oil
  • Salt

Preparation

  1. Prepare the sauce. Have the Bolognese sauce cooked and ready before assembling the lasagna.
  2. Slice the eggplants. Cut them lengthwise into sheets or crosswise into rounds, depending on the shape of your baking dish.
  3. Remove excess bitterness and moisture. Sprinkle the slices with salt and leave them in a colander for about 20 minutes. Rinse them thoroughly to remove the excess salt, then dry them well.
  4. Prepare the eggplant. Lightly coat the slices with olive oil and cook them until tender enough to layer.
  5. Begin assembling. Arrange a layer of eggplant in the baking dish, followed by Bolognese sauce and mozzarella. Add a little Parmesan between layers if desired.
  6. Add the egg layer. Continue layering until the dish is about halfway filled. Slice the boiled eggs into rounds and arrange them in one complete layer.
  7. Finish the lasagna. Continue layering eggplant, sauce, and mozzarella. Make mozzarella the final layer, then scatter all 60 grams of Parmesan over the top.
  8. Bake. Cook for 20 minutes, until heated through and lightly browned. For more color, briefly increase the heat at the end while watching carefully to prevent burning.
  9. Rest and serve. Remove the lasagna from the oven and let it stand for 5 minutes before slicing.

Serving Suggestions

Serve the eggplant lasagna as part of a homemade meal with a simple salad or meat-stuffed zucchini. A fruit salad, chocolate mousse, or lemon yogurt cake can complete the menu.
