Caprese Salad with Green Kiwi – A Simple Salad
This fresh variation on a classic Caprese salad pairs ripe tomatoes, mild mozzarella and basil with the bright, tangy flavor of green kiwi. A simple kiwi vinaigrette adds a lightly sweet citrus note. Serve the salad on its own or with toasted ciabatta.

Ingredients
For the Caprese salad
- 3–4 green kiwifruit, peeled and cut into 2–3 mm slices
- 500–600 g tomatoes, sliced
- 125 g mozzarella or buffalo mozzarella, torn into small pieces
- 2 tablespoons olive oil
- 20 fresh basil leaves, washed and dried
- Sea salt and coarsely ground black pepper, to taste
For the green kiwi vinaigrette
- 1 green kiwifruit, peeled
- 2 tablespoons olive oil
- 1 tablespoon white balsamic vinegar
- 1 tablespoon lemon juice
- 2 teaspoons honey
- Salt and pepper, to taste
Instructions
Assemble the salad
- Cut the washed tomatoes and peeled kiwifruit into slices of approximately equal thickness.
- Arrange the tomato slices on a serving plate. Drizzle them with 2 tablespoons of olive oil, then season with sea salt and coarse black pepper.
- Add the kiwi slices, torn mozzarella and basil leaves.
Make the vinaigrette
- Blend the peeled kiwi with the olive oil, white balsamic vinegar, lemon juice and honey until smooth.
- Season the vinaigrette with salt and pepper to taste.
- Drizzle it over the assembled salad according to preference, then serve.
