3-Ingredient Asparagus Tart with Green Mini Asparagus

This simple asparagus tart requires only three main ingredients: ready-made puff pastry, flavorful melting cheese, and fresh green mini asparagus. It makes a quick appetizer, snack, or light evening meal.

About Green Mini Asparagus

Green mini asparagus is commonly available in well-stocked supermarkets throughout much of the year. It is easy to prepare: wash it thoroughly and trim the woody ends. Very thin green asparagus can be used instead.

Choosing the Cheese

Fontal works especially well because it melts smoothly and has a mildly spicy flavor. For a stronger taste, use Fontina. Gruyère or a mature Tilsit-style cheese are also suitable alternatives.

The cheese affects how much seasoning the finished tart needs, so taste it before adding salt.

Ingredients

  • 275 g refrigerated puff pastry, approximately 40 × 32 cm
  • 200 g freshly grated Fontal, Fontina, Gruyère, or mature Tilsit-style cheese
  • 200–250 g fresh green mini asparagus or very thin green asparagus
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 200°C using the convection setting.
  2. Remove the puff pastry from the refrigerator a few minutes before using it.
  3. Wash the asparagus and trim away any woody ends. Coarsely grate the cheese.
  4. Unroll the puff pastry onto a baking sheet and distribute the grated cheese evenly over it.
  5. Arrange the asparagus side by side over the cheese, leaving approximately 5 mm between the spears.
  6. Bake on the second rack from the bottom for 20–25 minutes, or until the pastry is golden brown.
  7. Season with sea salt and freshly ground black pepper according to taste and the saltiness of the chosen cheese.

Serving Ideas

Serve the tart as an appetizer, a casual snack for guests, or a light meal with a glass of wine. It can also be customized with fresh or dried herbs.
